Match the nut finish and grade to the bolt — mixing BZP and stainless invites galvanic corrosion and galling. Use nyloc or a locking nut where vibration would loosen a plain nut, weld nuts for a captive fixing on fabrication, and rivnuts (threaded inserts) to add a strong thread to thin sheet or tube where you can't reach the back.
